Tom Fazio of Waterside Caterers (one of our absolute favorite caterers to
work with!) - Christopher Watkins - Roanoke Vineyards
My name is Christopher Watkins, and I am the Operations Manager at Roanoke
Vineyards. We are a small, family owned and operated producer of
hand-harvested, hand-crafted boutique wines on The North Fork of Long Island.
In the course of my duties for Roanoke, I quite often have the pleasure of working
with caterers on developing wine and food menus for special events. Waterside
Caterers has long been at the top of list when it comes to choosing a partner in
this endeavor, and I have recommended them on countless occasions to our
customers. Making the finest, ultra-premium, artisanal wines possible is our
priority, and we are very particular when it comes to pairing them with food.

tailored to complement our wines, but are consistently sensitive to the needs of

Throughout this past week I received thank you notes and phone calls
from the guests who attended the birthday party you so grandly catered.
Every message expressed that everything served was delicious, beautifully
presented and bountiful as well! The shrimp BLT's simply kept coming
all the way up until the mussels first course was served. The lobsters were
amazingly succulent and easy to eat. We still can't figure out what you
did so that we didn't need crackers. Just as mysterious is WHEN you did it!
You were always nearby, asking if we needed anything.
There's so much more I could say, but I must end with two thoughts: the
grilled marinated steak fillets and YOU. Everyone who attended said
they had never experienced steak of that quality. They also said that if they
had to choose but one man to attend an all woman party, you'd be the one. Your
catering is fabulous, and perhaps just as important, you are the
ultimate professional and so very nice at the same time.
